Perhaps you have a creative flair in the kitchen and rather cook your own Valentine’s Day dinner. Create an elegant dessert with a whole poached pear with red wine sauce infused with cinnamon and vanilla.
750ml bottle Merlot or other red wine
200g caster sugar
2 cinnamon sticks, snapped in half
1 vanilla pod, halved lengthways then halved across to make four strips.
4 firms pears, peeled.
Step 1. Tip the wine, sugar, cinnamon and vanilla into a deep medium pan and heat gently until the sugar dissolves. Add the pears, making sure they are completely covered by the wine, and then simmer for about 20-30 minutes until they are just tender.
Step 2. Remove the pears form the pan and boil the syrup for 30mins to reduce it.
Step 3. Plate the whole pear and drizzle syrup on top.
Find the perfect way to celebrate Valentine’s Day in Sydney and tell us how you created your memorable moment. #memorablemoments
